Portland, Oregon has long been an incubator for indie food trends. From hoppy micro brews, perfectly roasted coffee, communal restaurant seating, funky food carts, urban farming, and backyards full of egg laying chickens, Portlanders have never been afraid to try something new. So it’s no surprise that DIY whole animal butchery is catching on in Stumptown.
Perhaps one of the most over looked aspects of meat cookery, butchery has now become a national trend, but Portlanders take special pride in rolling up their sleeves and tackling the bloody challenge head on. Ravenous carnivores all over the city line up to get schooled at The Portland Meat Collective, Olympic Provisions, and The Ethical Butcher. Their hands on and demonstration classes include basic pig, lamb, and chicken butchery, methods for making charcuterie, and tips for using lesser know cuts of meat. We can’t think of a better way to appreciate where our food comes from. Do you have the guts to become a meat master?
