Surfer Inspired Sweets: Beachy Cream

The fact that the honest-to-goodness, downright satisfying and purely genius notion of sandwiching ice cream between cookies isn’t more readily available (like, it should be on every dessert menu) is still a mystery to me. But clearly there are a few shrewd folks in Malibu who know what’s up because they’ve put together a mobile cart that is cruising the streets and parties of that infamous beach town with sweet one-of-a-kind, all-natural ice cream sandwiches.

They call themselves Beachy Cream and they’re slinging a dangerous selection of surfer-inspired treats from the Ginger Wipe Out (candied ginger ice cream between molasses spice cookies) to the Strawberry Surfer Girl (strawberry balsamic swirl in a sugar cookie sandwich), the Key Lime Cowabunga (key lime ice cream with coconut oatmeal cookies) and more. And the vintage, pin-up girl company image they’re flaunting is just right.

Oh, and did I mention the ingredients are local and organic? Yeah, like you needed another reason to polish one of these off.
